Label that Stash!

canningIf you are a seasoned canner/preserver then this information may be obvious, but if not, read on. While some people label everything, I am not one of them. Some things need labels though & home-preserved food is high on that list! What do you put on the label? Well, for starters what is in the jar or container & the date you put it up. Now you know what you are about to eat & if it is safe. What else is there? I use batch numbers. This takes up very little room, isn’t much work & can be invaluable.
For example, lets say you put up a few small batches of jam, and one batch, while tasting fine, was a little jiggly (sorry for the technical jargon LOL). With batch numbers you can avoid giving out this jam as gifts. Don’t give your canning away? Another example…you have canned lots of pickles & all turned out well. In a few months you notice a few lids were now ‘unpopped’. If you are worried & have the batch # you can toss just what you need to & nothing more. Make salsa? My hubby gets a little liberal with the spices as we go, so having a batch number lets me know if I can serve a jar to guests, or if I will send them running from the house!

Labeling doesn’t need to be a lot of work. I just put up some corn for the freezer. The labels say corn-3 9/09. I will notate in my canning notebook that batch 3 was a litte starchier. Now when I want to make a casserole or soup I will grab that corn. Try it & I’ll bet you find it easy & helpful.

Make your own Hot Pockets – Once a Month cooking Ideas

I used to make calzones for my crew on a regular basis when they were growing up. A perfect grab and go idea for teens there is no limit of ideas to do with these. use one of my ideas or come up with your own!

These freeze extremely well and reheat in the microwave or oven making them perfect for once a month cooking sessions.

Calzone dough

calzone1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons oil
1 teaspoon salt
2 ¾ – 3 ¼ cup flour

Dissolve yeast in warm water. Add sugar. Let it set for a few minutes until foamy (if you’re using fast-rise yeast, you can just add the yeast with the flour and go on) Then stir in oil salt and flour. Knead 5 minutes. Let sit 5 minutes. Divide dough into 6 pieces. Roll/pat each piece into a circle ( maybe about 6” across or so)

Top half with filling of choice, keeping back from edges from edges so it will seal well. Fold the other ½ of the circle over the filling and pinch sides together or seal with a fork. Poke a couple steam vents and bake for 20 minutes at 375 degrees.

  3. Ham and cheese

  5. Hamburger,American cheese, and sautéed onion
  6. Left over stew

  8. Taco meat, olives, and onions with cheese over top
  9. mini meatballs , spaghetti sauce & mozzarella
  10. breaded chicken , spaghetti sauce , mozzarella & parmesan
  11. ham , cheddar cheese & cubed potatoes
  12. Turkey or chicken,onions,broccoli, and cheddar or Swiss
  13. fajita seasoned chicken or beef, red peppers,onions and Monterey jack
  14. Chopped hot dogs with chili and cheese
  15. lasagna
  16. steamed veggies in a white sauce

Ragu sauces work really well for these if you are in a hurry, such as the cheese or white sauces or you can make your own to make it more frugal.

Crockpot Favorites –Smothered Steak Strips and More

crockpot Today has been a busy day, so we are using the crockpot again, and I thought I would add some more crockpot recipes here too as well. I hope you enjoy!!!

Smothered Steak Strips

These are great!
Smothered Steak Strips Serves 4 to 6. !! GREAT !!
1 1/2 lb. lean chuck or round steak, cut in strips
1/3 c. flour
1 tsp. salt
1/2 tsp. pepper
1 lg. onion, sliced
1 (1 lb.) can tomatoes
1 (4 oz.) can sliced mushrooms
1 tbsp. molasses (optional)
3 tbsp. soy sauce
1 (10 oz.) pkg. frozen green beans (I skip these)
Toss steak strips with flour, salt and pepper; place in crockpot. Add onion, tomatoes, mushrooms, molasses, and soy sauce. Cover and cook for 8 – 10 hrs on low. Add green beans 30 – 45 mins before serving. Good served with rice.

Nacho Cheesy Chicken

4 to 6 boneless, skinless chicken breasts

1 can (1 lb.) diced tomatoes in juice

1 can condensed nacho cheese soup

1 can (4 oz.) mild chopped green chiles

salt and pepper to taste

-Combine all ingredients in the crock. Cover and cook on low for 7-9 hours. Serve

with hot boiled rice. Serves 4-6.

Crock Pot Chocolate Cake

1 box chocolate cake mix

1 box instant chocolate pudding

16 oz. sour cream

4 eggs

3/4 cup oil

1 cup water

Mix all together well. Spray the inside of the crockpot with nonstick spray

and pour the batter in. Cook on low for 6 hours. Serve with ice cream if

desired. This makes a LOT of cake and it’s very rich so all you

chocoholics should love it (I know I did!).

Rice Pudding
2 1/2 cups cooked rice
1 1/2 cups scalded milk
2/3 cup white or brown sugar
3 eggs — beaten
1 teaspoon salt
2 tablespoons vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup raisins
3 tablespoons soft butter

Combine all ingredients. Pour into lightly greased crock pot. Cook on high 1 to 2 hours. Stir during first 30 minutes. Recipe can be doubled.

Crockpot Recipes for Busy Spring Evenings

crockpot If you are like me spring is a busy time of year, between kids sporting events (softball here), working in the garden and just plain trying to enjoy some of the nice weather, dinner planning sometimes take a bit of a back seat.

And of course when that happens take out happens, or running to the deli at your local store and pretty soon your food budget is stretched all out of shape.

How I combat that is the crock pot, not only does it not heat up the house, but I can fill it in the morning when I am a bit more in planning mode, and then I dinner ready for  the evening regardless of what the evening brings.

 

 

CROCKPOT OOEY GOOEY MEXICAN CHICKEN

2 or 3 large boneless skinless chicken breasts
1 can low fat cream of mushroom soup
1 can low fat cream of chicken soup
1/2 can water
1 cup salsa
1 15oz can black beans, drained & rinsed
1 4oz. can diced green chili’s
1 tsp. chili powder
1 tsp cumin
1/4 tsp cayenne pepper
1 1/2 cups shredded low fat Monterey Jack cheese
In the Crockpot whisk together the soups, water and spices. Stir in the salsa, beans and green chili’s. Place the chicken breasts into the mixture. Cook on low 6 hours. Shred the chicken and stir in the cheese. Let cook another 30 minutes until cheese has melted and warmed through. Serve with warm low fat flour tortillas and shredded lettuce. Roll up like a burrito, or serve over a bed of shredded lettuce with baked tortilla chips for "taco" salad.

 

Crockpot Meatloaf

 

2lbs ground beef
1 finely chopped onion
1 can crushed tomatoes
a few splashes of Worsteshire
3/4 c. ketchup
1 t. garlic powder ( or minced garlic )
1 egg
salt
pepper

Take 2 pieces of bread of several crackers and soak them in milk. (make it look like mushy oatmeal )

Add this to your mix.

I use a round crock pot and just spread it to cover the bottom. Cover with a thin layer of ketchup.

Cook on low for 8 hours.

 

Stuffed Chicken Rolls

 

6 large skinless boneless chicken breast halves
6 slices fully cooked ham
6 slices swiss cheese
1/4 cup all-purpose flour
1/4 cup parmesan cheese
1/2 teaspoon rubbed sage
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 cup vegetable oil
1 can condensed cream of chicken soup – undiluted
1/2 cup chicken broth
chopped fresh parsley — optional

Flatten chicken to 1/8 inch thickness. Place ham and cheese on each breast.

Roll up and tuck in ends; secure with a toothpick. Combine the flour, parmesan cheese, sage, paprika and pepper; coat chicken on all sides.

Cover and refrigerate for one hour. In a large skillet, brown chicken in oil over medium-high heat.

Transfer to a 5-qt slow cooker. Combine soup and broth; pour over chicken. Cover and cook on low 4-5 hours. Remove toothpicks. Garnish with parsley if desired.

 

And for dessert if you happen to have two crock pots :D

 

Peanut Butter And Hot Fudge Pudding Cake

 

1/2 cup flour
1/4 cup sugar
3/4 tsp baking powder
1/3 cup milk
1 Tbs vegetable oil
1/2 tsp vanilla
1/4 cup peanut butter
1/2 cup sugar
3 Tbs cocoa
1 cup boiling water

Combine flour, 1/4 cup sugar and baking powder. Add milk, oil and vanilla. Stir until smooth. Mix in peanut butter. Pour into greased Crock Pot.

Stir together 1/2 cup sugar & cocoa. Gradually stir in boiling water. Pour mixture

over batter. Do not stir. Cook on high 2 – 3 hrs or until toothpick comes out clean.

10 Easy Hamburger Recipes

This morning is a busy morning for me so I thought I would post a few more of my recipes and try to do a regular post this afternoon. Enjoy!!

 

These recipes are all about hamburger, not exactly the healthiest meals but quick to fix and inexpensive for those nights when things need to be super simple.

 

Hobo Dinners

To serve four you will need four 1 pound coffee cans
1 pound ground beef
4 medium potatoes
small can green beans
small can carrots
2 onions
4 ears of corn (small), or 2 large ones cut in half
Make the ground beef into four patties, placing in bottom of coffee can. Next slice the potatoes and onions, putting them on top of patty. Drain the green beans and carrots add to the top of rest. Next put the ear of corn, salt and pepper to taste and a pat of butter. Cover can with aluminum foil, bake at 350 degrees for 1 hour. Nice thing about this one is you can change the veggies to each person taste.

 

 

Taco Soup

1 lb. ground beef
1 32 oz. can whole tomatoes
2 8oz. cans tomato sauce
1 medium onion chopped
1 15 oz. can kidney beans
1 15 oz. can whole kernel corn
1 Cup water
1 pkg. taco seasoning mix
sour cream, grated cheese, and tortilla chips
Brown meat and onion. Add remaining ingredients. Do NOT drain canned items.
Slightly mash tomatoes before adding to the soup. Simmer for 10 min. Put corn chips in the bottom of your bowl, pour soup over the chips. add a dollop of sour cream, sprinkle with cheese and chopped olives.

 

Poor Man’s Soup

1 lb. lean Ground Beef
4-6 Potatoes, peeled and cut into bite-size chunks
2 to 4 cups Milk
Amount of milk depends on quantity of soup you want to make)
1 or 2 Onions, chopped
2-3 cups uncooked Macaroni
Salt and Black Pepper to Taste
In a large skillet over medium heat, brown the ground beef and drain off any excess liquids.
Meanwhile, in another large saucepan over high heat, bring the potatoes to the boil, then reduce the heat to medium and cook until just tender, about 15 minutes. Pour off half the water.
Add the browned ground beef to the potatoes and remaining water, along with the desired quantity of milk, the chopped onions, and the uncooked macaroni. Simmer until macaroni is cooked.

 

Onion Hamburger Casserole

1 lb. hamburger
8oz. tomato sauce
1 pkg onion soup mix
2 Tbs flour
2 C. water
1 1/2 C. macaroni (cooked)
1 C. cheese
Brown hamburger. Stir in flour. Add tomato sauce, water, and soup.
Simmer 5 min. Mix in macaroni. Put in casserole dish and top with cheese. Bake at 350 for 45min.

 

Beefy Mexican Lasagna


1 pound ground Beef 1 can (16 oz) tomatoes chopped
1 pkg. Taco seasoning
1 large onion chopped
1 carton (12 oz) cottage cheese
1 ½ cups shredded cheddar cheese
2 eggs
12 corn tortillas
1 small can green chilies
Brown and drain beef, add tomatoes, seasonings, onions and green chilies.
Simmer 5 minutes. In a separate bowl combine cottage cheese, 1 cup cheddar cheese and eggs. In a 9×13 pan layer with tortillas ( 6 or more) over lapping edges and sides of the pan. Put all of the beef mix on tortillas, then add 3 or more tortillas on top, then all of the cheese mixture. If desired add more tortillas. Bake covered 350 degrees 45 minutes. Sprinkle cheese an onions on top. Bake 5 minutes more. Garnish with tomatoes.

 

Old Settler’s Beans

1 1/2 lbs ground beef
1/2 lb. bacon
1 small onion
Cut bacon into pieces, chop onion. Cook ground beef, bacon and onion until meat is browned and onion is tender.
Mix together:
1/3 C. brown sugar
1/2 C. white sugar
1/4 C. ketchup
1/4 C. BBQ sauce
2 Tbs. molasses or honey
2 Tbs. mustard
1/2 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1 can each:
Baby butter beans
Ranch Style Beans
Large can pork & beans
Add ground beef mixture to above ingredients and bake at 350 degrees for about 1 hour.

 

Hamburger Corn Pie


1 lb. ground beef
1/4 lb. bulk pork sausage
1 small onion, chopped
1 clove garlic
1 can (16 oz) tomatoes (any type-chopped, stewed etc)
1 clove garlic
1 can corn, drained
1 1/2 -3 tsp chili powder
1 1/2 tsp salt
1 can black beans, drained
1 small (8 oz) can tomato sauce, (if you like more sauce may add: olives, bell pepper, mushrooms)
Cook meat, onion and garlic, drain. Stir in tomatoes with liquid, corn, beans, chili powder and any other ingredients. Heat to boiling and pour into un-greased baking dish (I used 9×13, but suggested 9x9x2 or similar)
1 cup cornmeal
1 cup milk
2 eggs beaten
1/4 cup flour
1 cup cheese
Mix cornmeal, flour, milk and eggs. Pour over meat mixture. Sprinkle with cheese. Cook at 350 degrees, 40 minutes until golden brown.
NOTE: a less meat version is 1/2 pound ground beef, no sausage, 2 cans of black beans, 2 cans of corn and everything else the same above.

 

 

Cheesy Chili Casserole

1 lb ground beef
1 12 oz can corn
1 8 oz can tomato paste
1 T chili powder
1 8 oz jar of cheese whiz
4 cups tortilla chips
1/2 c chopped tomato
Brown meat and drain. Stir in corn, tomato sauce and chili powder. Add 1/2 c cheese whiz and stir until melted. Spread 1 cup meat mixture onto bottom of pan (use a 9" round cake pan) top with chips. repeat the layering twice, ending with the meat mixture. Bake 20 mins at 350. Top with remaining chips, chopped tomato and cheese whiz. Bake until the cheese whiz is melted. Put all the meat in the pan and top with one layer of chips.

 

Crock Pot Meat Loaf

16-18 cheese crackers
1 sm. onion, chopped
2 tbsp. green pepper, minced
1/4 c. chili sauce
1/2 c. milk
2 eggs, slightly beaten
3/4 tsp. salt
1/8 tsp. pepper
1 1/2 lbs. lean ground beef
Crush the crackers. In mixing bowl combine crumbs with onion, green pepper, chili sauce, milk, eggs, salt and pepper; mix in ground beef. Form into a 6 or 7 inch round loaf. Place in a slow cooking pot. Cover and cook on low for 6-8 hours or until done.

Sweet and Sour Meatballs


Meatballs:
1 pound hamburger (chuck or better is best)
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
1 egg
1 c. oatmeal
Mix and make into balls. DO NOT BROWN!
Sauce:
1/2 c. brown sugar
1/4 c. lemon juice
1 can tomato soup
Mix and pour over meatballs.
Cook 1 of these ways:
Crock-pot: 2-3 hours on high (if making double recipe use larger crock-pot and increase time to 7-8 hrs.) 350 oven for 1 to 1 1/2 hrs (turn over 1/2 way through).
Top of stove 1-2 hours The best part of this recipe is that you can make them ahead, freeze in the sauce and cook at your leisure. Serve over noodles, mashed potatoes or just by themselves.
